Recipe for Crepes

Crepes are one of the easiest and most versatile way to make a quick meal. For breakfast you can add cream cheese and/or fruit. At later meals add meats and/or veggies. With a little experimenting you could Taylor the recipe to gluten or dairy free. Substitute coconut oil for butter, almond milk for the milk and gluten free flour mix and you have a high protein wrap that satisfies!




Julia Child’s Master Crêpe Recipe

Ingredients:

1 cup flour

2/3 cup cold milk

2/3 cup cold water

3 large eggs

1/4 teaspoon salt

3 tablespoons melted butter, plus more for brushing on pan

Directions:

1) Mix all ingredients until smooth in a blender or with a whisk. Refrigerate.

2) Heat a non-stick frying pan over medium heat. Brush with melted butter.

3) Pour in 2 to 3 tablespoons of batter into the center of the pan and then tilt the pan in all directions to cover the bottom evenly. Cook about 1 minute, or until browned on the bottom. Turn and cook briefly on the other side.

4) Cool on a rack or plate as you finish making the rest. Serve as desired.

Fresh Flowers Blooming in Winter

Yes, you can enjoy beautiful blooms even in the middle of winter. Orchids used to be for wealthy people with green houses heated all winter. The hardy varieties.....the ones for sale in your local supermarket or building supply store....can live a long long time and bloom repeatedly.




-The ones above,(see the snow outside the window) are blooming in my kitchen....and they are at least 5 years old! They have bloomed several times and the flowers last 3 to 4 months at a time. How do you do this?

Really, it is easy.....put them in a location that gets a little morning sunlight....these are in a north west facing window. I am a notorious killer of plants by under watering them.....orchids seem to love this! I water them only once every one to two weeks. Let them get fairly dry between waterings.




They grow in tree bark....do not transplant them into soil of any kind. Buy orchid growing media if you want them in a bigger pot.

Do not cut anything off of them unless it turns brown. The flowers will eventually drop but new ones will reappear on the same stalk....a new branch will grow out.


Orchids are a little like birds they take into mines.....they are very sensitive to air quality. One year we had a gas fired space heater in the room....all the blooms fell off in just a couple of days. Once we turned it off....new buds started to appear a few weeks later.

The most amazing thing was seeing orchids growing in trees in the wild in Austrailia! Beautiful!

Perfect Veggie Soup








I call this the perfect vegetable soup because it is very healthy, delicious, versatile and very low calorie! It works with gluten and dairy free diets , low carb diets and can easily be modified to different cooking methods and vegetable assortments.

Eating this will help keep you hydrated and add plenty of needed vitamins and minerals the natural way.

You can make it with the vegetables you really enjoy or have available seasonally.

I make a big batch and eat it several times ....either by freezing the leftovers or taking it along for lunch at work.

I started this batch with two vegan vegetable bullion cubes. You could use chicken broth or bullion as well. I dissolved them in a little hot water and added these and six cups of water to the pot. I used a pressure cooker but you can use a soup pot or even a crock pot.

I added:
3/4 of a head of cabbage, cut into about 2"x2" pieces.
1 cut up onion....I used a big red one
5-6 cut up carrots....1" chunks

You can add other veggies like fresh green beans, turnips or potatoes etc.
But remember that starchy veggies will add more calories.

Cook this for 6 minutes at pressure in a pressure cooker or until your veggies are tender by other methods.

Just before eating or reheating....add:

Cut up mushrooms
Fresh baby spinach
Any other delicate veggies, like summer squash, zucchini, fresh peas, etc.

Cook for a few more minutes....until these get warmed up.

You can also add shredded chicken, shrimp, cooked ground beef or even kielbasa or other precooked sausage if you want it more hearty. Another possibility is some precooked gluten free noodles or rice.

Make the base ahead and freeze it....then add the extra things to add variety and keep this very healthy dish fresh for several meals. Don't be afraid to experiment and add your own touches....I like garlic, tumeric and a little curry and sea salt.
